Mole is a complex sauce that typically requires a long list of ingredients and a lot of preparation time. Here is a simplified recipe for chicken mole that you can try at home:
Ingredients:
- 4 chicken breasts, bone-in and skin-on
- 2 tablespoons vegetable oil
- Salt and pepper
- 2 cups chicken broth
- 1/2 cup dried ancho chilies, seeded and stemmed
- 1/2 cup raisins
- 1/4 cup sesame seeds
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin

- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground coriander
